This simple, fresh, crunchy salad is a delicious way to enjoy the health benefits of carrots, apples and walnuts. Serve on a warm summer evening with your favorite grilled entrée, or anytime.

Makes 2 generous servings.

Salad
1 Granny Smith apple
2 large carrots
¼ c. chopped walnuts
1-2 tsp. fresh lemon juice

Vinaigrette
1 T. cold-pressed safflower oil
1 T. balsamic vinegar
1 T. water
2 tsp. cranberry mustard
½ tsp. sugar

•    In a small bowl, whisk vinaigrette ingredients together.
•    Wash or scrub carrots and apple, but do not peel. Cut both into matchstick-size pieces. To prevent browning, mix apple pieces with lemon juice.
•    In a medium-sized bowl, toss apples, carrots and walnuts together.
•    Drizzle with vinaigrette. Serve immediately or chill.
