High Antioxidant Pomegranate and Banana Salad

Pomegranates are truly a superfood with high levels of three antioxidants plus vitamin C and potassium. Available fresh October through January, they are a seasonal treat you can learn to enjoy and take advantage of. Try this simple recipe as a fresh fruit dessert.

Serves 4.

1 pomegranate
3 bananas
1 T. maple syrup or brown sugar
¼ c. freshly squeezed lime juice (juice of 2 limes)
2 T. walnuts, toasted

•    Score the skin of the pomegranate and gently pull the fruit apart to free the seeds. Put the seeds into a bowl.
•    Mix together the lime juice and syrup or sugar.
•    Carefully toast the walnuts in a dry iron skillet or similar pan.
•    Slice the bananas diagonally and arrange on a plate.
•    Pile pomegranate seeds in the center of plate.
•    Pour lime juice mixture over all. Sprinkle with walnuts and serve.

Nutritional Information per Serving: 153 calories, 2.4 g protein, 33.6 g carbohydrates, 2.9 g fat (.3 g saturated),  0 mg cholesterol, 6.4 g fiber, 11 mg sodium.
