Brightly colored red and green apples, make this salad festive and healthy. Substituting low-fat yogurt for the usual mayo brings cuts the fat of the traditional recipe.
Makes 4 1 c. servings.
1 large Granny Smith apple
1 large red apple of your choice
1 tsp. lemon juice
1/3 c. raisins (the amount in one small snack box)
1/3 c. walnuts (chopped or whole)
1/3 c. chopped celery
½ c. vanilla low-fat yogurt
¼ tsp. cinnamon
Lettuce leaves for garnish
• Chop unpeeled apples into bite sized pieces with the skins on.
• Toss with lemon juice to avoid discoloration.
• Add the raisins, walnuts and chopped celery.
• Mix the cinnamon and yogurt together and pour over salad mixture, stirring to evenly distribute.
• Plate on a lettuce leaf or serve in a small bowl.
