Next time you are in the produce aisle, pick up an immune booster—the mushroom. The health benefits associated with this edible fungus are numerous and wide-ranging. Mushrooms are high in antioxidants, selenium, riboflavin and other healthful substances that protect the immune system and may even fight cancer, according to a session at the Institute of Food Technologists Annual Meeting and Food Expo in New Orleans this past July.
What makes the mushroom an immune booster? Compounds known as beta glucan, which keep immune cells in a state of vigilance, guarding against disease. In addition, research reveals that mushrooms contain ergothioneine, an antioxidant that contributes to immun health, as well as to the protection of the eyes, skin, liver, kidneys and bone marrow.
Research out of the Beckman Research Institute in California shows that mushroom cells contain mechanisms that suppress breast and prostate cancer cells. Clinical trials on the mushroom cancer link are in the works and we should see the results in about a year. In the meantime, consider using a beta glucan or mushroom extract supplement for a dose of protection.
