Almost all foods lose some nutrients when cooked. If you are going to cook vegetables in the microwave, cooking them with a minimal amount of water and for no longer than necessary can prevent some nutrient loss. The nutrients most likely to be lost include the water soluble nutrients: vitamin C, B vitamins and minerals like potassium and magnesium. Some are destroyed by heat. Others are lost in the cooking water. However, not all are lost! Usually enough nutrients are still left in vegetables to make them healthy. If you retain the cooking water and use it in soups or sauces you will retain some of the nutrients. A good mix of raw and cooked foods is your best bet for good health. Include salads, fruits and nuts in your diet.
