Cinnamon
The positive effects of cinnamon on glucose metabolism were discovered by accident at a USDA testing center where scientists were testing the effects of various foods on blood sugar levels. Their research led them to test the effects of cinnamon on 60 type 2 diabetics. By the end of the study, cinnamon had reduced blood sugar levels by almost 30%, increased insulin production and lowered cholesterol levels. In a 2007 study, 83% of participants saw a significant decrease (almost 8%) in fasting blood sugar levels. The compounds found in cinnamon that appear to be especially beneficial for glucose regulation appear to be water-soluble polyphenols called type-A polymers.(J Agric Food Chem. 2004 Jan 14;52(1):65-70.) It seems that cinnamon delays stomach emptying, which minimizes post-meal spikes in blood sugar. (Am J Clin Nutr. 2007;85:1552-6.)
Cinnamon's ability to control blood sugar also makes it a valuable tool for weight loss. Abdominal fat cells are particularly sensitive to high insulin levels, and store excess calories that become fat. Cinnamon may actually mimic insulin by stimulating insulin receptors on fat cells in the same way that insulin does, allowing excess sugar to move out of the blood and into the cells. This effect may reduce cravings for sugar and fewer calories to be stored as fat. Research has shown that taking cinnamon extract may lead to significant increases in lean body mass and a reduction in overall body fat. (J Int Soc Sport Nutr. 2006. 3:45-52.)

Cinnamon bark contains antioxidant substances that may have significant inhibitory effects on AGEs (advanced glycation endproducts)—a class of free radicals that have been linked to inflammation, insulin resistance and cardiovascular disease. (J Agric Food Chem. 2008 Mar 26;56(6):1907-11.) AGEs are absorbed into the body through the consumption of grilled, fried, or broiled animal products, such as meats and cheeses, as well as sterilized and pasteurized foods. Researchers have suggested that its antioxidant properties may be the reason that cinnamon has effectively lowered both blood pressure and cholesterol levels in numerous clinical studies. Interestingly, research on the effects of cinnamon on glucose regulation has often found that there is a link between the roles cinnamon plays in regulating blood sugar and improving heart health.
